Happy Pancake Day! For a pancake connoisseur it doesn’t get much better than tomorrow.
I have to admit I did not know much about this holiday, but it’s a religious custom and is a pretty big deal in England and Ireland. Check out this fun list of things about pancakes you may not have known about.
Did you know that the Romans called their pancakes Alita Dolcia? Sounds delish, I wonder what those ancient flapjacks were all about.
I bet you didn’t know about a $200 pancake made with gold in England or one called Blodplattar made from pork blood in Sweden!
While all that stuff is really fun and crazy, I take pancakes pretty seriously. Ok, not that serious, but serious enough to know many delicious and healthy pancake recipes from my fellow food bloggers.
While my blog is young, my love for pancakes is not new. Before transitioning to a plant based diet, I loved going to breakfast cafes and pancake houses to try different kinds of pancakes. I have enjoyed many tasty and unique stacks o’ cakes over the years. My pancake duty in life is to recreate the most memorable pancake experiences.
The pancakes highlighted below make regular appearances on my breakfast table. All this scrumptiousness is vegan and many are gluten free. They are all made with whole ingredients and unrefined sugars. While this list focuses on gourmet pancakes, they are healthy too and far better for you than what you find in most breakfast eateries.
Now, without further delay, here are some of my favorite vegan pancake recipes:
Dana from Minimalist Baker must have been visited by a Pancake Goddess because her pancake recipes are out of this world and I love them all. It was really difficult settling on one recipe to highlight, but if you love no bake cookies as I do, you have to make these pancakes. Once you try the no bake crumble, you will understand.
Izy from Top with Cinnamon has one of my favorite chocolate chip pancakes. Since they are practically guilt-free, I like to make extras and eat them later for dessert. Does anyone else do that? These pancakes are vegan and gluten free.
What’s a good pancake house without killer blueberry pancakes? Shannon from Yup its Vegan is definitely killing it with this recipe. Yup its vegan and gluten free!
I have already professed my love with sweet potatoes. Do you ever have a day when you want to eat cake for breakfast? This recipe allows me to eat as much cake as I want. The ginger caramel adds the perfect zing to this stack of sweet goodness.
This recipe from Katie at Chocolate Covered Katie is unbelievable. I made this as a surprise for my husband who loves tiramisu. As far as he is concerned, there are pancakes and then there are THESE pancakes.
Joanne at Oh My Veggies really nailed her take on a cinnamon roll with this pancake. When I crave a sticky cinnamon bun thingy, this is my go to recipe.
Apple Pie Pancake. Doesn’t that just sound so good? Claudia from Breakfast Drama Queen has lured me to these beauties. Cinnamon sugary apple goodness.
Who is not a fan of anything Cookies ‘N Cream? If you want to spoil yourself, check out Brandi’s recipe from The Vegan 8. All her recipes use 8 healthy ingredients or less and this one is a show stopper.
As a kid, I had PB&J sandwiches daily. These pancakes from Zach at The No Fuss Vegan really bring me all the way back to my grade school lunch room. Yum!
