I was just sitting down to write a new post about a delicious carrot salad I made this morning. Before I did, I checked the results of a contest I entered a month ago. Drumroll please…..I was selected as one of the winners! I submitted the smoothie recipe a month ago and have been eagerly awaiting the results ever since. The funny thing is that somehow I missed the announcement last week. The news today certainly made my week! I am super excited because I use Bai in my smoothie almost every day.
When making smoothies before Bai, I used to rely heavily on orange juice as my liquid ingredient. I love both the sweetness and tartness that orange juice provided to my smoothie. The only problem is that orange juice is not the healthiest ingredient to use. Store bought OJ is super processed, very acidic, and contains way too much sugar for a breast cancer survivor who needs to watch my sugar intake.
Bai, on the other hand, is low glycemic because it is sweetened with erythritol and organic stevia extract. It is low calorie, loaded with antioxidants, a natural source of caffeine and electrolytes, kosher, Non-GMO, vegan, and the bottle is BPA free. And besides all of its health benefits, it tastes really good too!
About the contest – the rules were simple: Invent a new smoothie using Bai5 as one of the ingredients. Based on the entries, five winners would be chosen. The smoothies would be judged based on the following categories: Best Overall Smoothie, Best Photography, Most Creative, Best Green Smoothie, and Blogger’s Favorite.
My submission was chosen as the Blogger’s Favorite by Jordan from The Balanced Blonde. I cannot tell you how stoked I am that she selected my smoothie as her favorite. I am super excited to have my recipe featured on Bai’s site as well.
As you probably know from my previous recipes, (like these Pina Colada Energy Muffins, this smoothie, this juice) I love anything with tropical flavors that reminds me of the beach. When I first tasted Bai’s Molokai Coconut, I was instantly whisked away to a tropical place and I knew I needed to indulge in a healthy version of a Pina Colada.
This smoothie is a delightful combination of pineapple, bananas, spinach, flax, chia, and Bai’s Molokai Coconut. The results are a refreshing smoothie that is good for you and tastes yummy.
